Baked Zucchini Fries

If you're craving fries but want a healthier alternative, this one's for you! I chose zucchinis as my base because it's one of my favorite veggies, but this recipe works wonders with sweet potatoes, carrots, and asparagus.

Cook Time: 10 minutes

 

Ingredients

  1. 2 Zucchinis

  2. 1/2 cup (120 ml) || Parmesan, Grated

  3. 1/2 cup (120 ml) || Almonds, Ground

  4. 1 Egg

  5. 1/2 tsp || Onion Powder

  6. 1/2 tsp || Garlic Powder

  7. 1/2 tsp || Oregano

  8. Pinch of Sea Salt + Smoked Black Pepper

Optional

  1. Pinch of Smoked Paprika (add if you want a spicy kick!)

 

Instructions

  1. Slice the ends of the zucchini (cut in half then slice each half lengthways or French-fry style strips) *note: you want your strips to be slightly larger than your average French fry size

  2. Mix the dry ingredients (grated parmesan, ground almonds, and spices) in a bowl *note: if you can't find ground almonds at the store, grind them in a food processor or blender! You can also just chop them with a knife if you don't mind the time

  3. In a separate bowl, beat the egg, and wet each zucchini piece before dipping it into the herb/spice mix to coat evenly *note: if you have the time and patience for it, do this one at a time with a fork. It'll give you the best texture and taste!

  4. Lay the zucchini fries in a single layer on a baking sheet and air fry for 10 minutes at 380 degrees until crispy and golden brown. *note: if you plan on having them out for a while, rest them in a single layer on a wire cooling rack

  5. Enjoy!
