Savory Oats: Miso Edition

If you've never had savory oatmeal before, this recipe is the best way to start.


By swapping the grain from rice to quick cooking rolled oats, you cut down the cooking time from 1 hour to just 5 minutes. On top of that, oats offer a variety of health benefits like aiding in a healthy gut! And we all know a healthy gut is KEY to a healthy body!


This recipe is SO easy and SO good, anyone can make & enjoy it.



 

Ingredients:

Porridge

  1. 1/2 cup || Rolled Oats

  2. 1 tbsp || Miso Paste

  3. 1 cup || Chicken Stock or water

  4. 1/2 tsp || garlic powder

  5. pinch of black pepper

Recommended Toppings

  1. 1/2 English Cucumber (chopped)

  2. Kimchi or pickled radish (for the crunch!)

  3. 1/2 Avocado

  4. 1 egg (poached or fried)

  5. Microgreens

  6. Zucchinis [ *Try Truffle Zucchinis: Cut 1/2 a zucchini and cook in a pan until soft and caramelized using TRUFF black truffle oil + truffle salt. ]

 

Instructions:

  1. Prepare toppings first *

  2. In a pot, add 1-2 tbsp oil of choice (ghee butter or avocado oil recommended) & cook the Miso Paste for 30-45 seconds until caramelized **

  3. Add in your liquid of choice (chicken stock recommended) to loosen the Miso paste Add in oats

  4. Lower the heat and cook for a minimum of 5 minutes or until the oats are thickened to your liking Add in garlic powder + black pepper

  5. Plate and add toppings as desired

  6. Enjoy!

* Oats are super quick to cook so preparing your toppings first will give you the best tasting results! Toppings can be personalized to your liking but I highly recommend including cucumbers or kimchi not just for the probiotic and fiber benefits, but for the crunchy texture they provide. ** Treat it as you would tomato paste! When you cook your Miso paste first, you caramelize the sugars and intensify its flavors.
