Baked Zucchini Fries

About the Recipe


1 large zucchini

1/2 cup (120 ml) parmesan, grated

1/2 cup (120 ml) ground almonds

1/2 tsp onion powder

1/2 tsp garlic powder

*pinch of smoked paprika, smoked black pepper, sea salt

1 egg


  1. Slice the ends off the zucchini, (cut in half then slice each half lengthways or French-fry style strips). *note: you want your strips to be slightly larger than your average French fry size!

  2. Mix the grated parmesan, ground almonds, and spices in a bowl. *by a "pinch", I mean less than a 1/2 tsp but feel free to adjust to your liking!

  3. Beat the egg, dip each zucchini piece into the egg, then into the herb/spice mix to coat evenly.

  4. Lay the zucchini fries in a single layer on a baking sheet and air fry for 10 minutes at 380 degrees until crispy and golden brown.

  5. Enjoy!
